Warming Beef Stew

Serves 4 

Ingredients

  • 500g braising steak, cut into chunks

  • 2tbsp olive oil

  • 1 large onion finely chopped

  • 2 cloves of garlic crushed

  • 1 carrot chopped

  • 1 stick of celery chopped

  • 2 tbsp sundried tomato paste

  • 2x400g tins chopped tomatoes

  • 800ml beef stock

  • 2 bay leaves

Method

  • Pre-heat the oven to 170°C. Heat the oil in a large casserole pot. Add the beef and brown on all sides.

  • Add the onion, garlic, carrot and celery. Sweat for 10 mins.

  • Stir in the tomato puree, then add the tinned tomatoes, beef stock and bay leaves.

  • Bring to the boil then place the lid on and put in the oven for 2 hours. 5) Serve with steamed cabbage, broccoli and cauliflower or with brown rice if in maintenance.

  • NB: This method can be used for pork, chicken or turkey just substitute for the relevant stock.
