Warming Beef Stew
Serves 4
Ingredients

500g braising steak, cut into chunks

2tbsp olive oil

1 large onion finely chopped

2 cloves of garlic crushed

1 carrot chopped
-
1 stick of celery chopped

2 tbsp sundried tomato paste

2x400g tins chopped tomatoes

800ml beef stock
-
2 bay leaves

Method

Pre-heat the oven to 170°C. Heat the oil in a large casserole pot. Add the beef and brown on all sides.

Add the onion, garlic, carrot and celery. Sweat for 10 mins.

Stir in the tomato puree, then add the tinned tomatoes, beef stock and bay leaves.

Bring to the boil then place the lid on and put in the oven for 2 hours. 5) Serve with steamed cabbage, broccoli and cauliflower or with brown rice if in maintenance.

NB: This method can be used for pork, chicken or turkey just substitute for the relevant stock.
