Salmon and Courgette Fritters
100g smoked salmon thinly sliced
1 courgette grated
6 tbsp ground almonds
1 tsp chopped Dill
Pinch of salt and pepper
2 tbsp olive oil
Whisk the egg with the ground almonds.
Add the smoked salmon, courgette, dill, salt and pepper to taste. Mix until well combined.
Heat 2 tbsp of olive oil in a frying pan, add the mixture and cook for 3- 4 minutes on each side.
Serves 6-8 Kebabs
500g chicken breasts
3 cloves of garlic
1 handful fresh coriander 1 handful fresh mint
6 spring onions
1 red chilli
Zest and juice 1 lemon Salt
Cut the chicken into 1 inch cubes.
Blitz all the marinade ingredients (except the olive oil) in a food processor then loosen to a paste with a little olive oil.
Add the marinade ingredients to the chicken pieces and mix well. Allow to sit for up to an hour.
Thread the chicken pieces on to skewers. Grill for around 5 minutes, turning regularly until cooked.
NB: You can replace chicken with pork, turkey, prawns, salmon or cod.
