Broccoli, Spring Onion, Ham and Cheese Frittata

Serves 2-3 


1/2 head broccoli

4 eggs

4 spring onions

2 slices ham chopped

4 Mushrooms sliced

2 tbsp grated parmesan cheese

2 tbsp olive oil

  • Preheat the oven to its highest setting

  • Blanch the broccoli and drain well

  • Heat the oil and fry the spring onion and mushroom until soft

  • Add broccoli and ham

  • Add the beaten eggs

  • Draw the mixture in from the sides of the pan until it is cooked underneath

  • Sprinkle parmesan on top

  • Finish cooking under the grill

Chocolate Bliss Balls

Serves 4

  • 100g Nuts - Cashew nuts, raw

  • 8 g Fine Desiccated Coconut

  • 8 dates (pitted dates or Medjool) 2 tablespoon raw cacao

  • 1 tsp, Vanilla extract

  • 2 tbsp., Honey


  • Place all the ingredients except for the coconut in a mixer and whiz until smooth.

  • With your hands roll the mixture into small balls.

  • Pour the desiccated coconut onto a chopping board and roll the balls in it to coat.

  • Place the balls on a plate and refrigerate until hard.
