Broccoli, Spring Onion, Ham and Cheese Frittata
Serves 2-3
Ingredients

1/2 head broccoli
4 eggs
4 spring onions
2 slices ham chopped
4 Mushrooms sliced
2 tbsp grated parmesan cheese
2 tbsp olive oil

Method

Preheat the oven to its highest setting

Blanch the broccoli and drain well

Heat the oil and fry the spring onion and mushroom until soft

Add broccoli and ham
-
Add the beaten eggs
-
Draw the mixture in from the sides of the pan until it is cooked underneath

Sprinkle parmesan on top
-
Finish cooking under the grill
Chocolate Bliss Balls
Serves 4

Ingredients​

100g Nuts - Cashew nuts, raw

8 g Fine Desiccated Coconut
-
8 dates (pitted dates or Medjool) 2 tablespoon raw cacao
-
1 tsp, Vanilla extract
-
2 tbsp., Honey
Method

Place all the ingredients except for the coconut in a mixer and whiz until smooth.

With your hands roll the mixture into small balls.
-
Pour the desiccated coconut onto a chopping board and roll the balls in it to coat.

Place the balls on a plate and refrigerate until hard.
