Salmon and Courgette Fritters

Serves 4

100g smoked salmon thinly sliced

2 eggs

1 courgette grated

6 tbsp ground almonds

1 tsp chopped Dill

Pinch of salt and pepper

2 tbsp olive oil


  • Whisk the egg with the ground almonds.

  • Add the smoked salmon, courgette, dill, salt and pepper to taste. Mix until well combined.

  • Heat 2 tbsp of olive oil in a frying pan, add the mixture and cook for 3- 4 minutes on each side.
