"What the Cluck" No Chicken Curry

Great sweet potato and chickpea curry with protein filled meat free vegan chicken substitute


Serves 6

Ingredients for the Curry


1 Box of "What the Cluck" from The Vegetarian Farmer

1 large onion diced

1 tbsp. cumin seeds

1 chilli deseeded and

chopped

1 tbsp. turmeric

1tbsp ground coriander

1 tbsp. Garam masala

2 tbsp. tomato puree

1 tin chopped tomato

1 tin chickpea rinsed and

drained

1 sweet potato

500ml water

2 tbsp. olive oil

Fresh Coriander chopped


Method


Heat oil in a large pan, add cumin seeds and fry just for 30 seconds until the nutty aroma can be smelt.

Add onion and sweat for 4-5 minutes.

Add What the Cluck Soya Chicken and fry for a further 2 minutes

Add chopped chilli, turmeric, coriander and tomato puree and mix well.

Add chopped tomatoes and sweet potato, then cover with enough water to cover the potatoes.

Bring to boil then reduce heat and simmer for 15 minutes.

Add Garam masala mix well, add drained chickpeas and cook for a further 10 minutes.

Check sweet potatoes are cooked through.

Garnish with fresh coriander.
