Vegan Bolognese Sauce


1 Onion chopped

2 Sticks of celery finely chopped

1 garlic clove crushed

500g soya mince

300ml vegetable stock

2 tbsp yeast extract

2 tins chopped tomatoes

2 tbsp tomato puree

1 tsp dried chopped herbs

1-2 tbsp vegetable cooking oil

salt and pepper to season


Heat oil and then add onion, celery and garlic and cook until soft

Add soya mince and fry off until cooked through.

Add chopped tomato, tomato puree, yeast extract and dried herbs

Add enough vegetable stock to make it a nice sauce and not too wet

Finally season to your taste.

Eat with egg free spaghetti pasta, or on potato/sweet potato jackets
